
Beat together at low speed:
1 cup oil
1 cup sugar
3 eggs adding one at a time
1 1/2 cups flour
1 1/2 tsp. baking soda
1 1/2 tsp. baking powder
3/4 tsp. salt
1 1/2 tsp. cinnamon
1/2 cup chopped walnuts
1 tsp. almond extract
2 cups raw blended carrots
Beat altogether. Bake 350F for 45 minutes.
