Up

8 Cups tomatoes

3 Large onions chopped

5 Jalapeno peppers

1 Habenaro chopped

1 Green pepper

1 Red pepper

2 Red hot chilli peppers

1 Anaheim (banana) pepper

¼ Cup Fresh parsley – finely chopped

½ Bunch of cilantro – finely chopped

6 Cloves of garlic – crushed or minced

1 Tsp. Dried chilli peppers

½ Tsp. Chilli powder

¼ Tsp. Cumin

¾ Tsp. Cayenne pepper

4 Tsp. Pickling salt

3 Tbsp. Sugar

2 Tbsp. Vinegar

1 Tsp. Black pepper

1 Tsp. Seasoned salt

2 - 5 1/2oz Tins of tomato paste

½ Tsp. Louisiana hot sauce

 

Makes 9 pints. Mom always put all the ingredients in the food processor and minced up really fine. Simmer 40 minutes, process 30 minutes (hot water bath). For medium hot: add to base recipe: 2 jalapeno peppers and 1 habenaro pepper. For hot: add to base recipe: 4 jalapeno peppers and 2 habenaro peppers.
